Pre-1.16, you could interrupt shield blocking and bow drawing with Player#updateInventory(). Player#updateInventory() does no longer do this. It seems that the method net.minecraft.server.v1_16_R1.EntityLiving#clearActiveItem() is what's normally used when shields are "broken" by axes. I think LivingEntity#clearActiveItem() would be useful for interrupting shield blocking and bow drawing.
