Using the latest snapshot, if you open up a crafting inventory some recipes show up despite not being unlocked by the player. Clicking on these recipes will not populate the crafting grid, however if the recipe is grouped it DOES show you how to craft them in the small icon. This would allow players to see how to craft an unknown item thus unlocking it by crafting it.
Once the recipe is known by the player, clicking on the recipe populates the crafting grid as expected.
